Sensory impacts of food-packaging interactions

MILES faculty member, Susan E. Duncan (Food Science and Technology), working with MILES trainee alumni, Janet B. Webster, discovered that novel materials with iridescent characteristics can reduce photochemical reactions in milk, thus protecting flavor quality for an extended period. The challenge of protecting photo-responsive nutrients and flavor molecules from light while permitting product visibility is a high priority to food packaging and materials scientists. Duncan and Webster have written a review article on sensory impacts of food-packaging interactions that responds to this question.
